A COTSWOLD stone 16th century coaching inn will be opening a new restaurant and wine bar this summer as part of a multi-million pound refurbishment.

The Lygon Arms in Broadway is launching the Lygon Bar and Grill at the end of this month, closely followed by the Lygon Wine Bar in the middle of July.

General manager Graeme Nesbitt said: “Concentrating on seasonality and product provenance, The Lygon Bar and Grill will represent the traditional brilliance of British food in a relaxed and informal setting, where guests can also enjoy botanical cocktails.

“The Mediterranean-inspired Lygon Wine Bar will surround an international wine list with tasty Italian sharing plates and casual dishes.”

The Lygon Bar & Grill’s head chef Ales Maurer, who trained in Prague, aims to use the very best seasonal produce from trusted suppliers.

Inspired by The Lygon Arms’ English heritage, Ales has created a seasonal British menu that celebrates fantastic local ingredients in a relaxed yet imaginative way.

The highest-quality produce is at the heart of all dishes, and has stemmed from friendly and sustainable rapport with Cotswolds suppliers, farmers and artisans to produce a varied all day menu.

New starter dishes will include Cotswold garden salad, crumbled goats cheese and toasted granola; and grilled octopus, fennel salad and citrus dressing.

Mains from the grill include milk-fed veal cutlet; rack of Welsh lamb; seared tuna, heritage tomatoes, black olives and soft boiled quails egg; Chateaubriand for two, grilled tomatoes and mushrooms; and whole lemon sole and lemon butter.

For pudding, offerings include blueberry and apple crumble with clotted cream ice cream, which exceptionally mirrors a seasonal, home-grown and sustainable British menu, and all-time favourites such as sticky date and toffee pudding with vanilla ice cream.

The hotel will also be offering a Bottomless Brunch Bellini at weekends and Bank Holidays when guests can indulge in unlimited Champagne or Prosecco, alongside their brunch.

Also, in partnership with the Chase Distillery near Hereford, The Lygon Arms will offer an exclusive afternoon tea created around Chase history, alongside a seasonal Chase cocktail. The casual dining space will seat 60 people, with 24 spaces in the bar.

The Lygon Wine Bar will have a timeless touch and takes strong inspiration from European wines, with a carefully-selected wine list chosen by master sommelier Gearoid Devaney, who has featured a distinguished selection of over 50 exclusive wines.

Offered alongside this will be small bites, Italian favourites and desserts. Sharing plates that can be enjoyed with wine include cured meats, and the pasta and pizzetta mains showcase honest Italian favourites. These include rocket and prosciutto pizza and vine tomato, chilli and basil pasta. The space will accommodate 50 with additional seasonal terrace seating for up to 24.

The hotel commissioned London-based interior design company Anita Rosato, which has created two distinct spaces steeped in history and unified by a comfortable ‘home away from home’ relaxed and inviting ambiance.

With a design palette comprising tweed, leather, dark woods and antique pieces, which echo the quintessential Cotswolds, the new dining concepts at The Lygon Arms will be focal points at the newly renovated property.
